Sooo…..
Today was a long day of nannying (lesson one of adulthood? I don't like nannying) so I came home only to realize I was STARVING. Having not eaten all day (except for that bowl of ice cream…and that other bowl of ice cream…) I decided to make some dinner. I had one eggplant, a tomato, some mushrooms, half a piece of stale bread, butter, coffee creamer, frozen chicken and hot dogs in the frige and Top Ramen and a can of corn in the cupboard. So what did I do? I cut the eggplant. I sautéed the mushrooms and the eggplant guts. Added some spinach. Some tomato, a lil salt and pepper….
I stuffed the eggplant skins with the sautéed stuff and baked it at 350 degrees for about 20 mins.

yep. That's totally me becoming domestic.
You go girl. We LOVE eggplant in our home! Write down the recipe if you really like it, you'll never remember it otherwise!
